Side characters that authors bother to introduce actually getting enough proper screen time and development. Especially in series that insist on introducing tons of characters.

Cuz why even bother if their always going to be on the sidelines?

A fantasy world with believable, realistic politics, cultures, and socio-economic conundrums.

A story that asks how and why the dark lord is able to play at Alexander with his multiracial legions of darkness, despite each race having its own history, culture, religion, and ethnic rivalries; why the alliance between men and elves is far less idealistic and more poisonous and pragmatic than what it initially appears, and why the Dwarves despite their isolationism and general neutrality, seem practically untouchable, even without their mountain citadels to consider.
