Mayuri can use all his toys, call the Arrancars and Nemu.

Orochimaru can also summon kages but must do so during combat.

No prep. or knowledge.

Mayuri can stab and paralyze EoS Kenpachi with his Shikai, pretty sure he destroys Orochimaru without any extra tools.
Not to mention there's nothing Orochimaru can really do against Mayuri's Bankai poison, especially with no Edos to begin the fight.
