Giants can famously launch people high into the air. This is supported by the in-game book All About Giants, where a wood elf notes this hapens to Nords who cross giants (And is his own eventual fate).
Giants seem peaceful enough. Until you threaten them. Then they swing huge clubs and launch even a burly Nord over field and stream. The trip probably kills the Nord. That would be my guess, as I've never been able to interview a survivor of a giant's swing.
IF this is not enough; word of god not only confirms that this was a bug they kept in because it was so funny, but giants can launch people into orbit!
A lot of people don't know this, but I originally designed the Giant to look like my father, Jim Lobe (you can google him if you like, he's a journalist). With his weathered features and weary demeanor, the Skyrim Giant was meant to convey a profound feeling of oldness, of a long life lived in the sun. I wanted players to feel like children again, small, in awe of the largeness of our parents as they moved around the house. To create this, I referenced the art of Adam Adamowicz (obviously - he was the concept artist there at Bethesda Softworks!), farmers from around the world (to get that creased-skin look) and African tribal scarring (blended with a Celtic influence).
The model, fully-clothed, weighs in at around 12k polys. Watch out for that club - it'll send you into orbit.
(Fun-fact: We at Bethesda identified that physics bug in the game almost right away... and then decided it was too hilarious to take out!)
To send someone into orbit would mean the giants have to hit them at escape velocity speeds, which on Earth (or an Earth-sized planet) is 11.2km/s (or 11200m/s).
T = 11200m/1s
= 11200/340.29
= Mach 32.9131035

The average weight of a person ranges from 60kg to 80kg depending on where they come from, which will serve as our low end and our high end.

(Low end)
KE = (0.5)mv^2
= (0.5) X 60 X 11200^2
= 3763200000 joules
= 0.8994263862333 tons of TNT

(High end)
KE = (0.5)mv^2
= (0.5) X 80 X 11200^2
= 5017600000 joules
= 1.199235181644 tons of TNT

Final Results
Giants send people flying (speed) = Mach 32.913
Giants send people flying (energy - low end) = 0.899 tons of TNT
Giants send people flying (energy - high end) = 1.199 tons of TNT


To further cement how completely legitimate this is, giants can also explode the ground by smashing it with their clubs, so imagine what would happen if they hit a person.
